Israeli Couscous/Pearl Couscous/Maftoul.
with pine nuts and parsley
Serves: 1 Scale Update
Ingredients
- 3 Tbsp butter divided
- 10.5 cup pine nuts
- 0.5 cup shallots finely chopped
- 1.5 cup couscous
- 1 cinnamon stick
- 1 bay leaf
- 2 cups chicken broth
- 0.5 tsp salt
- 0.25 cup minced parsley
- 0.25 cup rasins optional
- 1β2 lemon lemon zest
- 0.5 tsp black pepper to taste
Directions
- Melt 1 tablespoon butter in a large saucepan over medium-low heat.
- Add pine nuts and stir until golden brown. Transfer to a small bowl.
- Melt remaining 2 tablespoons of butter in the sauce pan over medium heat. Add shallots and sauce until golden brown. Add couscous, cinnamon stick and bay leaf. Stir until couscous browns slightly. Add broth and salt and bring to a boil.
- Reduce heat to LOW, cover and simmer until liquid is absorbed , and couscous is tender.
- Remove from heat and stir in parsley, pine nuts and lemon zest. Add the raisins for a savory sweet taste. Season with black pepper to taste!
